March 19, 2015 – This recipe was prepared for us by Andrea & Ron from Wisconsin (in a “B” class I might add) who were on our February 2015 Baja Tour. It is sooo delicious and very adaptable to use cauliflower instead of potatoes for a different, but just as delicious flavour!
POTATOES OLE
1 Box (7.2 oz.) roasted garlic mashed potatoes (or any pkg or homemade mashed potatoes)
1 1/2 cups French’s cheddar french fried onions (only avail. in US I think)
3/4 cup shredded cheddar cheese
3/4 cup salsa (any kind) we prefer green salsa and if fire roasted even better!
3 Tbsp. sliced olives
Heat oven to 425. Make potatoes as directed on pkg. Stir in 3/4 cup onions.
Spread mixture in ungreased 2 qt. baking dish
Top with cheese, spread with salsa
sprinkle with olives and remaining onions
Bake 3-5 min or until onions are golden
Can be served with sour cream and/or cilantro
