March 17th, 2014 Happy St. Patty’s Day! from Baja! Just a little something with a hint of green!!
1 lb. Jumbo cooked shrimp – diced
1 med. tomato – diced
1 avocado – diced
1 jalapeno chili – seeded & chopped fine
1/4 cup chopped red onion
2 limes – juiced
1 tsp. olive oil
1 tbsp. cilantro – chopped
salt & pepper to taste
In small bowl combine red onion, lime juice, olive oil, pinch salt & pepper. Let sit 5 min to mellow the onion.
In large bowl combine remaining ingredients plus the onion mixture. Gently toss – adjust salt & pepper to taste.
