Quick, easy and tasty vegetarian dish – tumeric & Garam Masala, probably not avail. everywhere!
400 gm tin chick peas
1 med. onion (finely chopped)
1/2 tsp. grated ginger (or ground)
1/4 tsp. mashed garlic
1-2 green chilies (seeded & finely chopped)
1/4 tsp. tumeric
2 Tbsp. vegetable oil
2 lg. ripened tomatoes (chopped)
1 tsp. ground coriander
1 1/2 tsp. Garam Masala
1 1/2 Tbsp. lemon juice
2 Tbsp. chopped Cilantro
Drain chick peas, reserving liquid. Cook onions, ginger, garlic, chilies and tumeric in the oil until golden and softened. Add the tomatoes and cook to soften, then add coriander & chick peas. cook for 10 min. Add 1/2 cup of the reserved liquid and cook another 10 min.
Add garam masala, lemon juice and stir in the Cilantro. Cook 2-3 min. adding more liquid if needed to make sauce.
Serve with chapaties or tortillas.
